UT Tyler Dining Services Kitchen Supervisor Wins Third in Regional Competition
Natividad Arriola, The University of Texas at Tyler dining services kitchen supervisor, placed third in a regional cooking competition held March 22, at the University of Louisiana in Monroe, UT Tyler food services director Shannon Mariani has announced.
Each of the eight competitors created a three-course menu consisting of a first course, entrée and dessert under a four-hour time frame and with limited resources. The competitors were judged based not only on presentation and taste of the dishes, but efficiency and kitchen skills as well.
Arriola’s menu included a crunchy strawberry romaine salad, grilled chicken with a mango salsa, ginger rice with bacon wrapped green beans, and a lemon chiffon sponge cake with lime filling, whipped cream and strawberry topping.
This will be special part of The Met’s menu for one day only, to be announced soon, Darryl Breaux, assistant director of UT Tyler food services said.
With more than 20 years experience, Arriola began working at UT Tyler in January 2007. He graduated from the culinary program at Corpus Christi’s Delmar College in 2005.
